Tasty Tuesdays {Chunky Cookies}

This post comes with a health warning. These chunky cookies are not for the faint hearted. They are not for anyone who is trying to be good, to be healthy or losing weight. They are indulgent. Chocolate cookie heaven. Or if like me and you have one treat day a week, this is what you should make…

A little recipe I have adapted as Lil G wanted to make chunky cookies. *Tip : When fresh out of the oven they are a little bit gooey. This is a must so be sure to stick to the timing! When broken in half you will find HUGE chunks of white and milk chocolate. Delicious. When left to cool you’ll hear that beautiful snap and a crunch when you bite. I can confirm that they are delicious. A win win at a dinner party and easy to make with a toddler.

I prefer to make them on the big size. The bigger the better in my opinion. And you get more chunks of chocolate.

Ingredients (makes 12 cookies)

  • 300g Caster Sugar
  • 200g Baking Butter (room temp)
  • 1 large bar of Milk chocolate
  • 1 large bar of White chocolate
  • 1 large egg
  • 75g Cocoa powder
  • 275g Self raising flour

Utensils

  • Bowl to mix
  • Baking trays
  • Grease proof paper
  • Pre-heat over to 200 degrees
  • Wooden spoon and spatula

Method

  1. Cream the butter and sugar together until a smooth mixture
  2. Break in the egg and mix
  3. Add the remaining dry ingredients (flour and cocoa powder), ideally in parts to ensure fully mixed
  4. The mix will become quite stiff and chunky
  5. Break up both bars of chocolate into squares and add to the mixture
  6. Mix together either with a spoon or by hand (I find a mixture of both works)
  7. Break up the mixture into chunks and roll into balls (be sure to have at least one white and one milk chunk in each ball)
  8. Place no more than 6 large balls to each baking sheet
  9. Pop in a pre-heated oven for no more than 10 minutes. When you pull them out they should still look a little gooey, after a few minutes they will start to firm up, remove and pop onto a cooling rack
